There’s much more to this steak than its cool name. Teres Major, also known as shoulder tender, petite tender, or mock tender, is most akin to the tenderloin in texture, taste, and tenderness, but with a richer flavor. Cut from the chuck section just below the front leg, the Teres Major is one of the most delicate cuts we offer, and one of our favorites for impressing foodies and meat aficionados. Delicious when cooked sous vide, we also think it shines when cooked with the reverse sear method.
Portions: We recommend a serving size of 6 ounces per individual, as it optimally provides a gratifying dining experience while promoting a sense of balance and moderation. Alternatively, for individuals with a greater appetite, we propose an 8-ounce serving size. This generously portioned option ensures a more substantial dining experience, catering to those seeking a hearty meal.
All of our steaks are cut for 1 ¼ inch thickness, so individual steak weights can vary significantly based on the different length of each cut. Each cut for sale on our website can be selected from within a weight range.
